Complex cup at a discount price (non-flavored coffee)

I am coffee enthusiast whose preferred brewing method is pour over. I order whole beans so I can have fresher coffee and can adjust the grind size to fit which brewer/recipe that I am using for the day. I was given a gift card to Mystic Monk by a generous family member. I really enjoy non-flavored, Ethiopian single origin coffees which have berry tasting notes. So I decided to try the Ethiopian coffee from Mystic Monk. I was surprised on how the size of the beans varied so widely from almost peaberry size to large. That may have more to do with the farmers than with the roaster, but I thought that was unusual. Since Mystic Monk's offers more ground coffees than whole bean coffees, I expected to find some broken beans in the bag, but it was not an unreasonable amount (compared to some roasters I have tried in the past). I would have liked the website to include how the beans were processed (natural, washed, honey process, etc.). I really liked that these beans were Fair Trade beans. Tasting notes are subjective and I struggled to find the berry and citrus tasting notes for these beans though I tried seven different brewers using 12 different brew recipes. I did eventually hit the tasting notes, so I would recommend using the Hario V60 or similar brewer that can pull out more acidity in order to hit the berry and citrus notes. I found that different V60/drip cone recipes would pull out different tasting notes (one pulled out the berry, another pulled out the citrus). All that said, these beans did produce a tasty cup of coffee and I think they are being sold for a great price. If you are used to flavored coffees and are expecting the same level of flavor from the tasting notes of these beans, then you will be disappointed. However, if you generally do not drink flavored coffees and are looking for subtle flavors at a discount price, than this coffee may be up your alley.

Incredible!

I made some espresso with this. Courser espresso grind, very hard tamp, and then did a 2:1 ratio and an extraction time of about 30s.

And it came out fantastic! Comparable with some of the really expensive ($30+lb) locally roasted stuff, and even some of the ultra-speciality imported stuff. This will probably become our daily driver coffee for espresso at our house. Seriously blown away at how good this was/is.

Monks: raise the price on this one!
